Pasta with Tomato Cream Sauce - Family Flavor p 129

 Ingredients:

2 TBSP butter

2 TBSP diced onions or 2 shallots

2 garlic cloves, minced

1 tsp kosher salt

2 TBSP tomato paste

2 cups heavy cream

1/2 cup freshly grated parmesan cheese, plus extra for garnish

1 pound pasta (penne or fettuccine), cooked according to package directions

1/2 cup minced fresh basil


Method:

In a medium skillet over medium heat, add butter. Once butter is melted, add the onion or shallots, garlic and salt. Saute until onions are softened, about 5 minutes. Stir in tomato paste and saute until the onions take on the tomato paste's red color, about 2 minutes. Stir in heavy cream and Parmesan cheese. Simmer for 8 - 10 minutes, until the tomato cream sauce has thickened. Pour sauce over pasta and toss until pasta is well coated. Transfer to a serving dish and garnish with Parmesan cheese and fresh basil.

Yields: 6 servings
