Ham and Cheese Frittata - Family Flavor p59

Ham and Cheese Frittata

Ingredients

8 eggs

2 TBSP water

1/2 tsp kosher salt

1/4 tsp ground pepper

1 tsp butter

1/2 cup diced ham

1/2 cup shredded cheddar cheese

1/4 cup sliced green onions (optional)


Method

Preheat over to 400 degrees F.

In a medium bowl, combine eggs, water, salt and pepper. Whisk well, until eggs are broken up and smooth. Set aside.

In a small non-stick skillet over medium-high heat, add butter. Once butter is melted, add ham. Sauté until ham is lightly browned, about 2 minutes. Pour in eggs and add 1/4 cup cheddar cheese. Gently mix the cheese in and then allow the egg to set on the edges. Once the egg has begun to set, sprinkle remaining cheese on top and then put the pan in the oven. Bake for 10-12 minutes, or until frittata is set in the middle.

With a rubber scraper, loosen the edges of the frittata and transfer it to a cutting board. Slice in to wedges and serve. Garnish with green onions.

Cheesy Chicken and Rice - Family Flavor

Cheesy Chicken and Rice - Family Flavor

3 boneless skinless chicken breasts - cooked and shredded

4 cups low-sodium chicken stock

2 cups long grain white rice

1/4 cup unsalted butter

1/2 yellow onion, diced

1 tsp kosher salt

1/2 tsp ground pepper

2 garlic cloves, minced

1/2 cup heavy cream

1/2 cup chopped sun-dried tomatoes (optional)

2 TBSP minced fresh parsley

2 1/2 cups shredded cheddar cheese


Cook and shred chicken.

In a medium saucepan over high heat, add chicken stock. Once boiling, stir in rice, cover and set heat to low. Simmer for 15 minutes and then stir, cover and cook for an additional 5 minutes. Remove from heat, fluff with fork, and set aside.

Heat broiler to high. In a large skillet over medium heat, add butter. Once butter is melted, add onion, salt, and pepper. Saute until onion is softened, about 10 minutes. Add garlic and saute for an additional minute. Increase heat to medium high and stir in the chicken, heavy cream, sun dried tomatoes (if using), and parsley. Stir well, then add rice and 1 1/2 cups of the cheese. Stir until cheese is melted, about 3 minutes. Transfer rice mixture to 9x13 pan, sprinkle remaining cheese over the top and set in broiler until cheese is melted, about 3 minutes.

Thai Chicken Salad (The Family Flavor p 156)

 For the chicken:

2 boneless, skinless chicken breasts

extra virgin olive oil for seasoning

kosher salt and ground pepper, for seasoning


For the salad:

1 head romaine lettuce, chopped

1/3 cup chopped fresh cilantro

1 red bell pepper, sliced thinly

1/2 cup frozen edamame, thawed

1/2 seedless cucumber, chopped

1/2 cup chopped peanuts


For the dressing:

1/4 cup smooth peanut butter

2 TBSP sugar

2 TBSP vegetable oil

2 TBSP honey

2 TBSP rice vinegar

1 TBSP soy sauce

1 1/2 tsp kosher salt

1/4 tsp cayenne pepper


Directions:

Preheat oven to 400 degrees F. Set chicken breasts on baking sheet. Rub a small amount of olive oil onto each one and season with salt and pepper. Roast for 25-30 minutes, or until an inserted thermometer reaches 165 degrees F. Allow to cool, shred into bite-sized pieces, and set aside.

In a small bowl, combine peanut butter, sugar, vegetable oil, honey, rice vinegar, soy sauce, remaining 1 1/2 tsp salt and cayenne pepper. Whisk well and set aside.

In a large bowl, combine romaine lettuce, cilantro, red bell pepper, edamame, cucumber and peanuts. Add chicken and toss until well combined. Drizzle peanut dressing evenly over the top, Toss well. Serve immediately.

Ingredients

12 cups Kellogg’s Rice Krispies cereal

2  10 oz bags (8 cups) mini marshmallows

1 ½ sticks (¾ cup or 12 tablespoons) butter cubed

1 cup sweetened condensed milk

1 teaspoon Kosher salt

2 teaspoons vanilla

1 cup butterscotch chips

2 ½ cups chocolate chips

Flaked salt


Method

Butter a 9 x 13 pan. Measure out cereal into large plastic bowl. Over medium heat, melt butter until it bubbles, foams, then once golden brown, remove from heat. Stir in condensed milk. It will bubble up, so keep stirring until smooth. Add vanilla and salt. Add marshmallows. Return to heat. Stir constantly until all are melted and mixture barely boils. Pour hot marshmallow mixture over cereal. Mix until coated. Mix in butterscotch chips. 


Heavily butter your hands. Dump into prepared dish. Press down tightly until flat. Melt chocolate chips in microwave 1 minute and stir. Repeat until chocolate is smooth and barely melted. Pour over treats and spread to the edges. Sprinkle a light layer of salt over the top. Refrigerate uncovered until chocolate hardens. Keep at room temperature, or serve chilled.

STUFFED SHELLS 6 to 8 people
This can also be made ahead, which is a good idea as it gets messy in the kitchen!
Serve this with the bread (see above) and green salad or vegetables and fresh fruit.
1 pk. (12 oz.) *jumbo* shells (these are sometimes hard to find)
32 oz. (4 cups) of ricotta cheese
8 oz. mozzarella cheese, diced or shredded
1/2 cup parmesan cheese
2 eggs, bean with a fork
1 Tbls. parsley

Cook pasta until done, stirring gently to prevent breaking the shells.
Rinse well with cold water; make sure each shell is rinsed (these are hot!) Drain.
Mix cheeses, eggs and parsley in a bowl; add a little black pepper.

Cover the bottom of a 9x13" pan with a thin layer of tomato sauce.
Fill the shells with the cheese mixture and lay them into the pan.
Mix one or two 15 oz. cans of tomato sauce with two tsps. of Italian herbs, and pour this over the shells. Or, you can use a 28oz. jar of spaghetti sauce.
I usually cover the pan with foil, and remove the foil the last ten minutes of baking.
Bake at 350 until hot for about 35-45 minutes. Bake longer if this has been refrigerated. Let the shells sit for at least 5 minutes so they can firm up before eating. Pass more parmesan.
